WHere is a home-style interpretation of a cocktail from the seasonal menu. Designed as a party-sized pre-mixed that's packed with the flavours associated with Christmas time, making it ideal for a festive gathering. Reserve the remaining citrus syrup for morning drinks, desserts, or to mix another batch of this cocktail.

Makes enough for 10 servings

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar

To make the Cocktail (makes 850ml, serving 10)

A few cranberries, as a garnish
Mandarin essential oil, to finish

Method

Making the Cordial: Put every items in a pan, heat until it reaches a gentle boil, mixing so the sugar melts. After that, take off the burner allowing it to cool fully. Pour to a clean bottle, cap it keeping it in the refrigerator, it will last for up to one month.

Preparing the Cocktail Base: Pour all the liquids in a big jug, leave to sit for an hour, then filter it , ideally through cheesecloth, making it completely strained.

For serving: Measure 85ml of your cocktail base to a cocktail shaker filled with ice, gently stirring gently for a minute to chill. Strain to a chilled martini glass or similar, top with the cranberries and finish using a brief mist of the essential oil over the top.
